Banana bread with matcha icing

This banana bread is perfectly balanced. A little sweet. A little earthy. A little chocolaty. It’s everything you need in a breakfast, snack, dessert — you name it!

Yield: 1 loaf

Banana Bread Ingredients:

3/4 c. olive oil
3/4 c. brown sugar
3 large bananas, mashed
2 eggs
1 tsp. vanilla extract
2 c. all-purpose flour
2 tsp. baking powder
1 tsp. salt
1 tsp. ground cinnamon
1 c. semi-sweet chocolate chips

Icing Ingredients:

1 1/2 c. powdered sugar
2 tsp. matcha powder
2 tbsp. + 1 tsp. milk
1 tsp. vanilla extract

Instructions:

1. Preheat oven to 375 degrees and grease a loaf pan. (Lining it with parchment paper is a nice bonus!)

2. In a medium bowl, mash the bananas and set them aside. In another medium bowl, whisk together the dry ingredients and set them aside.

3. In a large bowl, whisk the olive oil and brown sugar until combined. Then, add the eggs, mashed bananas, and vanilla, stirring after each addition.

4. Dump in your dry ingredients and stir until just combined. You don’t want to over-stir the mixture and develop too much gluten. If you do, you’ll end up with a tougher loaf.

5. Stir in the chocolate chips and then transfer the mixture to your prepared loaf pan. Bake until a toothpick inserted into the center comes out clean, about 1 hour. (Smears of melted chocolate are okay — you just don’t want to see any uncooked batter.)

6. While your banana bread cools, prepare your icing by first whisking together your powdered sugar and matcha. Then, add the milk and vanilla and whisk until the mixture is completely smooth.

7. Cover your loaf in your dreamy matcha glaze, and ENJOY!
