Perfectly Purple Ube Waffles
Yield: 3 big waffles
Ingredients
1 1/2 c. all-purpose flour
1/2 c. whole-wheat flour*
6 tbsp. (1/4 c. + 2 tbsp.) granulated sugar
1 tbsp. baking powder
1 tsp. salt
1 1/2 c. milk**
2 eggs
2 tsp. vanilla extract
2 tsp. ube flavor
1/4 c. (1/2 stick) unsalted butter, melted
Instructions
1. In a large mixing bowl, whisk together both flours, sugar, baking powder, and salt.
2. In a medium bowl, whisk together your eggs, milk, vanilla extract, and ube flavor.
3. Once well combined, pour the wet mixture into the dry mixture until just combined. Finally, fold in the melted butter until just combined as well. You don’t want to overmix and form too much gluten.
4. Pour 1/3 of the mixture into a hot waffle iron that’s been spritzed with a light coating on nonstick spray. Cook until your desired crispness on the outside (about 5 minutes for most standard waffle irons).
5. Serve with butter, maple syrup, fresh fruit, and more!
*Whole wheat flour adds extra nuttiness to these waffles, but it can be substituted with an extra 1/2 c. of all-purpose flour in a pinch.
**I test and cook with oat milk, but any dairy or nondairy milk will work.
